I love those evenings when I'm suddenly inspired to make a new dish out of things I already have in the kitchen! What do all these ingredients make? Cilantro Lime Chicken with Coconut Rice! So delish.
Limes are the best! And they were 8 for $1 at Henry's Farmers Market this week!
Love the smell of fresh cilantro...so good!
Cilantro Lime Chicken with Coconut Rice
1 cup rice
1 cup coconut milk
1 1/3 cup water
2 Tbsp. shredded coconut
2 Tbsp. olive oil
2 chicken breasts, sliced in strips
2 Tbsp. cilantro
Salt and pepper
Place 1 Tbsp. olive oil in the bottom of a medium pot. Add rice, coconut milk, water, and shredded coconut to pot. Heat over medium-high heat, stirring regularly so it doesn't burn. When the coconut milk and water starts to bubble, reduce heat to low, cover, and simmer 20-23 minutes. (Tip: When the rice is done, replace the lid and let it steam approximately 5 more minutes.)
Meanwhile, heat the remaining oil in a large pan. Add the chicken strips and season with salt and pepper. Squeeze the juice of one lime into the pan. Cook until browned, approximately five minutes each side. Add 1 Tbsp. cilantro midway through cooking.
Fluff rice with fork. Serve chicken on top of rice. Squeeze one lime slice over the chicken and rice. Garnish with remaining cilantro and additional shredded coconut if desired.
